From low-fat and salty, to full flavoured and creamy, Fairview Cheese is a veritable smorgasbord of crafted delights.
The Fairview Cheesery produces a range of over 50 cow’s milk and goat’s milk artisanal cheeses, including white mould, blue mould, feta and cream cheese styles. To ensure there is something for everyone, we strive to offer traditional cheeses such as Brie and Camembert, while our winning innovations such as our White and Blue Rock cheeses help place us ahead of the herd.
All Fairview cheeses are made with non-animal rennet and are certified Halaal and Kosher. Made from 100% Jersey cow’s milk or milk from our Saanen goats. All that’s left for you to do is taste and enjoy!
White Mould Cheese
Traditional
Brie
A traditional recipe is used to produce this Brie, made from rich Jersey cow’s milk. The firm texture at the beginning of shelf life will soften towards the centre as the cheese ripens from the outside in. The flavour intensifies with age, developing into a creamy texture and delicate mushroom aroma. This Brie is perfect for cheese boards and baking.

Camembert
A traditional recipe is used to produce this Camembert, made from rich Jersey cow’s milk. The firm texture at the beginning of shelf life will soften into a smooth, oozing centre as the cheese ripens. With age, the flavour develops into a robust, earthy profile with subtle mushroom notes. This Camembert is ideal for baking or serving as part of a cheese board.

This Jersey cows’ milk Camembert is mild and creamy, with an even, supple texture and characteristic savoury flavour. Fairview’s Ready to Eat cheeses are produced to be ready to enjoy as soon as you purchase them. So don’t worry if you have left it to the last minute to stock up for your cheeseboard!

Brie Ripe
& Ready
This Jersey cows’ milk Brie is mild and creamy, with an even, supple texture and characteristic savoury flavour. Fairview’s Ready to Eat cheeses are produced to be ready to enjoy as soon as you purchase them. So don’t worry if you have left it to the last minute to stock up for your cheeseboard! Although it will continue to soften slightly as they mature, the body of this cheese will not ooze like some traditional Brie.

Blue Cheese
Blue Tower
A full fat blue veined Gorgonzola style cheese with a mild flavour and rich creamy texture. Blue Tower is made with more cream than our famous Blue Rock, resulting in a rich texture. It also has a slightly higher moisture content, making it a bit softer and more decadent.
Blue Rock
A full fat blue veined Roquefort-style cheese with a rich flavour and a firm yet creamy texture. A lengthy four- to six-month maturation ensures that the enzymes produced by the mould interact with the fats and proteins in the cheese to create the characteristic taste and flavour.
Dessert Cheese
White Rock
with Cranberries
A mild, semi-soft white cheese with added cranberries and natural fruit essences. A lovely combination of sweet fruits and a cheesy flavour. A favourite in the tasting room on the Fairview farm.

Goat's Cheese
Crottin
One of the first cheeses produced at Fairview, Crottin is a full flavoured, firm, white mould cheese made to a traditional recipe. This cheese has a goat flavour that intensifies with age.
Chevin
Traditional
A soft, goat’s milk cheese with a characteristic flavour. Chevin is one of the first cheeses that was made at Fairview and is the most popular goat’s milk product. It is still made using the same traditional recipe, with the curd pressed in muslin bags to remove just the right amount of whey.

A traditional Jersey cow’s milk cream cheese with added onion and chives. This is a versatile cooking cheese, and is superb when tossed with fresh egg pasta and grilled Mediterranean vegetables.

A blend of smoked paprika, chilli, origanum and cumin spice on the outside with birds eye chilli infused into the cream cheese. Creates a tasting explosion with a lingering Spanish spice flavour.
