Cream Cheese Omelette with Caramelised Onion, Tomato Concasse and Parmesan Cheese

Ingredients

3 eggs, lightly whisked

1 tbsp unsalted butter

Salt and pepper

2 tbsp caramelised onions

2 tbsp Fairview Cream Cheese

1 fresh green chilli, chopped

Two tbsp tomato concasse ( 1 whole tomato, seeded and cubed)

2 tbsp grated parmesan cheese

Chives

Method

1. Season egg with salt and pepper
2. Add butter into a nonstick pan and heat until butter starts to sizzle, add the egg and stir until it starts to set, leave to set slightly at the bottom.
3. layer the filling of cream cheese, chilli, chives, caramelised onions, tomato and grated parmesan.
4. Roll the omelette closed. Reduce the temperature and allow the cream cheese to soften properly while turning the omelette once more.
5. Serve with more grated parmesan and chives.
