Fairview Cinsault 2015
As one of the pioneers of Mediterranean varieties in South Africa, Cinsault has always provided subtlety to our most revered blends, and is a pleasure to work with in the cellar. The variety is perfectly suited to Paarl, and these old vineyards have been manicured for over thirty years to produce the most profound expression of this elegant wine.

The grapes were harvested from dryland farmed vineyards in Darling, just about four kilometers from the ocean. The vines are trellised and planted on deep red oakleaf soils. Viticultural techniques have evolved and include monitoring vineyards for optimal picking times, adopting a combination of sampling and tasting to show greater expression of place.
The Sangiovese, Merlot and Shiraz come from Fairview’s Darling vineyards. They are dry-land farmed and planted on deep oakleaf soils. The Cabernet Sauvignon is from Fairview’s vineyards in Stellenbosch which are predominantly planted on gravel soils (koffieklip). Summer canopy management practices include suckering and leaf removal to ensure optimal sunlight penetration.
Our flagship cheese, Roydon Camembert, a World Cheese Awards Gold winner, is crafted using a secret, traditional recipe and is named in honour of one of Fairview’s earlier cheesemakers. It is produced in the traditional French method, with a dash of our goats’ milk to give farmhouse flavour and characteristics. Roydon Camembert ripens from the outside towards the center and should be enjoyed in the ten days preceeding its best before date for optimum flavour.
South African National Dairy Championships First Prize Winner. A full fat blue veined Gorgonzola-style cheese with a mild flavour and a rich, creamy texture. The Blue Tower is made with more cream than our famous Blue Rock, resulting in its famously rich texture. It also has a slightly higher moisture content, making it a bit softer and more decadent. While it is perfectly suited to a cheese board, the Blue Tower is also delicious in a blue cheese sauce or crumbled over baked butternut.
