Broken Barrel 2012
A unique blend made from exciting Southern French and Spanish grape varieties, some of which were introduced to South Africa by Charles Back on Fairview Farm. The vineyards are planted on decomposed granite soils on the upper slopes of Paarl Mountain.
Fairview Cinsault 2015
As one of the pioneers of Mediterranean varieties in South Africa, Cinsault has always provided subtlety to our most revered blends, and is a pleasure to work with in the cellar. The variety is perfectly suited to Paarl, and these old vineyards have been manicured for over thirty years to produce the most profound expression of this elegant wine.
Drie Papen Fontein
The grapes were harvested from dryland farmed vineyards in Darling, just about four kilometers from the ocean. The vines are trellised and planted on deep red oakleaf soils. Viticultural techniques have evolved and include monitoring vineyards for optimal picking times, adopting a combination of sampling and tasting to show greater expression of place.
South African National Dairy Championships winner. A soft goat’s milk cheese with a characteristic flavour, Chevin was one of the first cheeses to be made at Fairview. Our most popular goat’s milk product, it is still made using the same traditional recipe, with the curd pressed in muslin bags to remove just the right amount of whey.
World Cheese Awards Gold Medal and First Prize Winner. A full fat blue veined Roquefort-style cheese with a rich flavour and a firm yet creamy texture. A lengthy four- to six-month maturation ensures that the enzymes produced by the mould interact with the fats and proteins in the cheese to create the characteristic taste and flavour.
