One of the (many) gifts that Charles Back has brought to Cape wine was, and still is, Fairview Viognier. Planting the mother block of this French grape in 1994, Charles and team have nurtured this variety to bring you a gorgeously aromatic and refined wine. A must try!
The grapes were hand-picked early morning and whole-bunch pressed with only the free run juice used. 40% of the Viognier was fermented in stainless steel tanks and 60% was fermented in French oak barrels (20% new, 20% 2nd fill and 20% 3rd fill oak barrels). After fermentation, the wine was left to mature sur lie, with regular stirring (battonage). The wine was racked off the lees after 8 months and the components blended prior to filtration and bottling.
