Fairview The Beacon Shiraz 2016

It may be a bit unusual for a wine farm to make 3 different bottlings of the same variety, but each of our Single Vineyard Shiraz’s have a unique story to tell. At 33°44’ latitude 18°48’ longitude, trigonometric beacon 194 still rises above the ancient metamorphic shale it sits on – soil that has seen ocean beds and explosive volcanic magma – and soil in which our intense dark berries are grown on today.

Winemaker’s Tip: Try this wine against its sisters Jakkalsfontein and Eenzaamheid to experience the difference terroir can make in the ultimate result of a wine.

Grapes were harvested fully ripe at 25° balling. The fruit was brought to the cellar in small lug boxes, destalked and hand sorted over a sorting table. All raisins, under ripe berries and stalks were removed. The sorted berries were sent straight to open French oak fermenters (foudres). Manual punch downs (pigeage) were performed three times daily. Post fermentation maceration lasted for two days. Wine was basket pressed, and malolactic fermentation was completed in French oak of which 50% was new oak and 50% was 2nd and 3rd fill barrels. This vintage
spent a total of 24 months in oak.
