Riesling is one of the most collectable wines among top connoisseurs and sommeliers alike, popular for its incredible versatility, aromas and ageing potential. Driven by our terroir, we’ve opted to craft an off-dry version of this immensely popular German grape, swirling with honey and citrus blossom scents.
The drought conditions of the past year, along the West Coast (Darling) resulted in drastically reduced crop with smaller bunches and berries size. The small crop and high than normal January temperature prompt us to pick the grapes early than normal. The resulting wine is light and fresh.
Picked in the early morning at 22 balling, the grapes were whole bunch pressed, after which the juice was allowed to settle for 48 hours before being racked off into stainless steel tanks and cold fermented. The fermentation was stopped early leaving the wine naturally sweet.
