The wine was fermented separately in foudres after handsorting and hand punched daily to extract bold colour and tannin. The raw, bold wines were then taken to barrels in 2017 for malolactic fermentation and aging. After being aged in oak for 29 months, only six barrels were selected for their remarkable oak-fruit balance whilst being bold and extreme in style. The final selection was 2/3 new oak and 1/3 second fill, 225L French Oak barrels.
Dark, inky red to black in colour. Notes of plum, black berries, Christmas cake and baking spices on the nose. Big and bold on the palate with generous flavours of dark fruit and vanilla. Bold tannin structure yet generous in length.

The Bloemcool Monster is a dark and broody bottling from the imagination of the Fairview winemaking team. A massive, extracted and concentrated wine – typical of the warm and dry terroir of Paarl. Blended from 4 barrels of Durif / Petite Sirah and 2 barrels of Tempranillo, these varieties are dark and bold and can only be tamed into the glass once allowed to age in oak. A bold tannin structure makes for excellent ageing ability.
