Garnet red in colour, this is a classic example of Merlot. The nose is rich with milk cocoa powder, over-baked bramble fruit, and even hints of sandalwood, while the palate is beautifully perfumed, dense and layered thanks to the presence of firm tannins. A perfect match for roast lamb or rib of beef, and truly moreish.

The cool climate grapes were picked early morning and transported to the cellar. It was destemmed and gently crushed into open top stainless steel vessels for fermentation. The wine was transferred to barrel for malolactic fermentation and aging. After 13 months in barrel – one barrel (new 225L French oak) was selected for bottling. The wine was racked and bottled and aged in bottle for 1 year before release. A big, bold version of this popular variety expressive of its distinctly Darling origin.
