  • Hi Talia,
Thanks for your comment and question. There is some info on our Goat herd on this site, under the ‘ON THE FARM’ tab at the top of the page, or you can click here http://fairview.co.za/on-the-farm/fairview-goats/
Our Feta is made using cows’ milk. I will get some more info on this herd and add it to the site.
    Thanks for the support.
    Chris.

  • Yesterday I bought your “fresher feta” for the first time. Wow, now I know what feta should taste like! May I please join the “Anti brine Society” or am I now a member because I love it?!
    Yippee for cheese and wine!
    Regards

  • My son and family live in Angola, his wife is mad about Feta cheese but it was always dificult to pack and take back with them – brine being messy and heavy, but then I discovered Fairview’s Feta, and not only is it a really good cheese but it is also much easier to transport and even the price is right! Well done, we are most impressed!

  • Good Day,

What is the shelf life of this product in a vac pack Im so use to buying my feta in Tubs it seems starnge to buy it like this. How is it preserved if you do not have a brine any more??

    Thanks

  • Hi there Enrico

Fairview Feta shelf life is 14 weeks from the day of packing. Our Feta is brined in what is known as production brine were the correct salt level is obtained. Once the correct salt level is reached the product is released for packing. Our product is vacuum packed which means during the packing process the oxygen in the pack is removed and the pack is then sealed. By removing the oxygen and keeping the cheese refrigerated below 5°C we obtain the 14 weeks shelf life. Once the pack is opened the product must be consumed within 3 days. If not spoilage yeast and mould could start growing on the surface of the product.

Feta in the tubs also goes through a production brining process to get the salt level correct in the product. During the packing process the salt level in the brine that is put in the tubs is adjusted down to a similar salt level as the cheese so that the cheese does not become too salty during the shelf life of the product.

    I hope that this helps.
