Fairview Eenzaamheid Shiraz 2006
Posted in Previous VintagesEenzaamheid is ownded by Christo Briers-Louw, whose family has owned this land since 1775. Christo is a dedicated farmer, who has an intimate knowledge of the soils of Paarl. The gravely, decomposed shale soils of Paarl allow Shiraz to ripen without irrigation, producing wines of great expression and concentration.
This wine was previously known at Solitude Shiraz. Read more »
Fairview Jakkalsfontein Shiraz 2005
Posted in Previous VintagesThe Swartland (Black Land) region of the Cape gets its name from the indigenous veld “Rhinoceros Veld” which has a natural dark shade. This region has been farmed since the early 1700, by free burghers who were settled by the Dutch East India Company to provide supplies for the company’s ships sailing to the spice islands in the east. Wild animals often preyed on the burghers’ sheep, and competed for food and water. This provided an excuse to defy the administrators of the Cape, and start wine production in this region. The Jakkalsfontein vineyards are situated around a spring where, to this day, the eerie evening calls of black-backed jackals can be heard. Old unirrigated bush vines produce bunches of Shiraz grapes with small berries, resulting in a concentrated berry and spice laden wine with a long finish.

Fairview Pegleg Carignan 2008
Posted in Previous VintagesThe Basson family, who have farmed at Die Slot for three generations, were one of the first families to plant Carignan in South Africa. At 17 years of age, Cobus Basson was helping his father plant vines when a tractor overturned and rolled onto him, causing the loss of a leg. Being a man of great humour and spirit, he is affectionately known amongst local farmers as “Houtbeen” (Pegleg) Basson. Pegleg Carignan is a bold, spirited wine with enormous character and depth of flavour, oozing with the essence of soil and sunshine. Carignan has found its natural home in South Africa, producing a spicy and expressive wine. A great compliment to Houtbeen himself.

Planted in a North – Westerly facing rocky outcrop, the vines are pruned to a “bosstok” or bush vine. Depending on the growth, the vine is pruned to between 3 and 5 bearers per vine. Summer canopy management including a topping, which will reduce wind damage and green cropping at 80% veraison to ensure even ripening. Posted in Previous VintagesHarvest Date: February 2002 Oenological Treatment: The grapes were harvested full ripe 26.6 degrees balling on the 14th February 2002. Destalked and lightly crushed into stainless steel fermenters. After initial natural fermentation, we inoculated with selected Rhone yeasts to ensure a complete fermentation. After a week of post fermentation maceration, we press and transfer to barrels for malolactic fermentation, where the wine is left to age for 16 months. Periodic racking ensures the clarity and stability of the wine and therefore no filtration is needed prior to bottling. Read more »

Planted in 1996, 2 clones of SH1 and SH21, were grafted on R99 rootstock. The soil type, Swartland, is a deep uniform decomposed shale with excellent water retention and allows these unirrigated vines to easily ripen the crop without stressing, during our usually hot, dry summers. The extended Perold trellis system, planted in a South West – North East row direction on a westerly facing slope is well positioned to ensure maximal cooling from prevailing summer winds. Sufficient aeration also drastically reduce possible vineyard diseases. Straw is packed in every second row, to form a deep mulch. This helps to retain moisture and keep weeds at bay. The mulch also improves soil microbe activity and root development. Strict winter pruning (8 – 10 two-eye bearer per running meter), and summer canopy management (2 shoots per bearer and 3 tip actions) ensure a well balanced crop, that reaches good phenolic ripeness. A final crop thinning at 80% verasion also ensure a even ripeness. The vineyard is regularly visited during the ripening period and tested by taste, visual and analytical examination to determine exact picking date.

Posted in Previous VintagesThe first vintage of the Cyril Back is a barrel selection Shiraz from two vineyard sites in Paarl and Stellenbosch. The Stellenbosch fruit was from a south facing vineyard on the slopes of the Simonsberg mountains, at 350-400m above sea level. These soils are a combination of Hutton, Oakleaf and Tukulu soils derived from granite parent rock. This 8 year old vineyard is trellised, and receives minimal irrigation as the soils have good water retention. Read more »

Fairview Oom Pagel Semillon 2007
Posted in Previous VintagesAs a young boy, I spent hours listening to the anecdotes of an old man who we affectionately called Oom Pagel (Uncle Pagel). He was a handsome man with a drooping moustache, a descendent of the Malay slaves brought to the Cape by the Dutch. I was fascinated by his stories which spanned a century of the life and times at Fairview. These stories instilled in me a love of the land and a respect for the people who worked it. Between all these stories, Oom Pagel still found time to grow champion vegetables. Oom Pagel’s 12 children were born at Fairview, and a number of his grand and great-grand children live and work with us today. Semillon was Oom Pagel’s favourite grape, so it is fitting that we honour him with this wine.

Fairview The Beacon Shiraz 2005
Posted in Previous Vintages, WinesAt 33°44’ latitude 18°48’ longitude, the surveyor general’s trigonometric beacon 194 rises above a mound of ancient metamorphic shale. Formerly the bed of a primordial ocean, these shales were blasted into a mound by the heating actions of magma penetrating close to the earth’s surface. The Dreyer family has farmed in Paarl since 1705. Willie, the present generation Dreyer farmer, has an intimate knowledge of dry land farming. Unirrigated bush vines battle through large, flat, grey shale stone. The roots must claw their way deep beneath the rock in search of moisture and nutrients. Nature and the farmer work a double shift: the Glenrosa soils of Paarl encourage grape bunches with tiny berries; the vines are pruned to bear a small crop. The joint result is a wine of considerable concentration and distinction.

Posted in Previous VintagesThis is the first time that we have made a special late harvest, and it is appropriate that it is from a varietal that we know so well. The low yielding viognier vines have allowed us to produce a rich and concentrated wine.
Fairview La Beryl Rouge 2004
Posted in Previous Vintages, WinesIt’s the red stablemate of the La Beryl Blanc. In this case, it’s shiraz grapes that are handpicked and laid out on straw-lined racks in a shed rigged up with large fans to help air-dry the berries. After about a month the grapes have shrivelled up, leaving raisin-like berries. Only a single barrel of a sweet, intensely flavoured wine is made after a light pressing and natural fermentation in old French oak barrels. The La Beryl Rouge, with its distinctive aromas and flavours of ripe plums and coffee, is made less sweet than the La Beryl Blanc.

Posted in Previous Vintages, WinesFairview La Beryl, a traditional handcrafted straw wine, personifies the quintessence of grape. The grapes were carefully hand harvested into small baskets and transferred to an old barn where they were delicately laid out on beds of straw to desiccate. Eventually the bunches lost about 75% of their volume, intensifying flavour and sweetness. The grapes were gently pressed and the juice fermented in French oak barrels. La Beryl is fragrant, succulent and crisp, a sumptuous dessert wine of balance and finesse. I am proud to honour my late mother with this wine – Charles Back.

Fairview Caldera 2006
Posted in Previous VintagesCaldera is a blend of Grenache vines (46%); Mourvèdre (27%) and Shiraz (27%). The Grenache is predominantly from a 64 year old Swartland vineyard. The fruit was hand harvested early morning, the berries hand sorted and fermented in 2000 litre open top French Oak vats (stukvate) using Rhone yeasts. Hand punching was done twice daily and the wine was basket pressed. The individual components were matured in 2nd to 4th fill French Oak for 14 months, then blended and bottled unfined and with a very light filtration.
Caldera has developed a unique style over the past years. This is a wine that shows lovely deep fruit and evolved tannins and typical southern Rhone character. There is depth and concentration, but it is not overly showy. This is one of my favourite wines at Fairview, and is made to be appreciated, savoured and enjoyed. Anthony de Jager

Fairview Caldera 2005

Caldera is a blend of Grenache vines (50%); Mourvèdre (25%); Shiraz (25%). The Grenache is from a vineyard of 53 year old vines. The fruit was hand harvested early morning, the berries hand sorted and fermented in open French Oak vats. The individual components are matured in French Oak for 14 months, then blended and bottled using no fining and very light filtration.
